An Update From the Bay
I had to ask: "Is it my imagination, or are your tomatoes tasting better these days?" I was at Bay Produce, a commercial grower of hydroponic tomatoes and a sheltered work program of the Challenge Center in Superior, Wisconsin.
The broad smile that emerged on Work Services Supervisor Debbie Gergan's face supplied my answer. "It's not your imagination," she said. "One of the things we recognized in our changeover was that the consumer knows what they want, and what they want is a better tomato. So, with our new process, we can and leave the fruit on the vine longer and send them to market later, resulting in a better taste."
The Challenge Center is a nonprofit program that services adults with developmental delays, disabilities, or other special needs by providing them with meaningful work experiences producing hydroponic tomatoes.
