Growing lettuce for the tourist industry in the Caribbean can be a frustrating experience. Countless guidebooks warn: Don’t drink the water and don’t eat any salads in the tropics. If you want to maintain your health and well being when on vacation, people have been told over and over that they must give up any idea of having a fresh salad--even at the better restaurants.

No more! Well, at least not if you happen to be visiting the island paradise of Roatan, Honduras, in the western Caribbean and the lettuce you’re eating was grown hydroponically by Blue Harbor Plantation.

This new growing operation now supplies most of the island’s resorts and better restaurants with gourmet lettuce, cucumbers, and culinary herbs. By the end of 2000, tomatoes and melons will have been added to the menu--all grown hydroponically and dished to even the most skeptical customers.
